David's Kosher Salt are large, rough crystals that take a long time to dissolve. A tablespoon of kosher salt will contain fewer salt crystals, by volume, than table salt, which has much smaller crystals. There is not much difference between kosher salt and rough “sea salt”.
Kosher salt is often recommended by TV chefs because it has a less intense and more pure, salty taste and because it's easier to pick up the crystals and toss them into the pot.
Kosher salt is particularly useful for drawing the flavour out of vegetables when blanching.
